4 Easy Recipes for Lazy Days

When the idea of cooking a full, time consuming meal is too daunting.

1.) Garlic Tomato + Spinach Pasta recipe

(Family size)

Ingredients:

  • 1 pack of cherry tomatoes
  • 3 cups of spinach
  • 1 tbsp. minced garlic
  • 3 tbsp. of butter
  • 1 box of penne noodles
  • 1/4 cup olive oil
  • 2 cups Parmesan cheese, (1 ground, 1 shredded)

Instructions:

Boil a pot filled up ¾ of the way with water, for 15 minutes. When the water comes to a boil, pour the box of penne in. Let cook until pasta is soft. Meanwhile, slice your tomatoes into smaller halves.

In a separate pan, mix ¼ cup of olive oil, 3 tbsp. of butter, and 1 tbsp. of minced garlic. When the pan is heated, add sliced cherry tomatoes. Let simmer without interruption for 2-5 minutes.

When pasta is soft, place cooked + drained pasta in the pan with the other ingredients. Mix well. Then, add three cups of spinach. Mix well. Add desired seasonings, (i.e., creole seasoning, garlic powder, Old Bay seasoning, etc.). Add desired amount of ground Parmesan and mix. Lastly, sprinkle shredded Parmesan on the top for a melted finish.

2.) Oven-Baked Pizza Bagels

(For two pizza bagels)

Ingredients*

  • Bagels
  • pizza sauce
  • shredded cheese
  • other desired toppings

*All brands, sizes, and quantities are optional for this recipe.

Instructions:

Preheat oven to 370 degrees.

Spit a bagel in half, (each half of a bagel will be the foundation of the pizza bagel). Spread desired quantity of pizza sauce onto both halves of the split bagel. Then, sprinkle shredded cheese across the bagel pieces. After, add desired topics.

Place the uncooked bagels on a pan with aluminum foil, and place in the oven for approximately 10 minutes. After 10 minutes, carefully take the pan with the bagels out of the oven. Let cool for 5 minutes and enjoy!

3.) Eggs with Tortillas (Tortillas con Juevos)

Ingredients:

  • 1/8 cup of cooking oil
  • 4 tortillas (shredded)
  • 2 eggs

Instructions:

Shred four tortillas. No particular shape/size is necessary.

Then, pour 1/8 cup of oil into a pan on medium heat. When the oil is hot, place shredded tortillas in the pan. Using a spatula, mix shredded tortillas until they are a very light brown. Remove tortillas to a safe plate. Drain the oil in the pan without cleaning it, (so there is still a hint of oil).

Whisk your eggs, then lace whisked eggs in the oiled pan pan, along with the fried tortillas. Mix the eggs and tortillas gently until scrambled and cooked thoroughly. Finish with any seasonings/toppings you desire!

4. Microwaved (‘Baked’) Potato

Ingredients:

  • 1 potato
  • shredded cheese
  • sour cream
  • olive oil
  • butter

Instructions:

With a fork, puncture holes all around your potato, everywhere you possibly can. Place potato on a plate and pour olive oil over it until it is almost completely coated. Then, lather the olive oil onto the potato thoroughly with your hands on whatever parts of the potato that aren’t completely coated.

Place the oiled potato on different, microwave-friendly plate in the microwave, first for five minutes. After the five minutes is complete, turn the potato so that the side previously facing up faces the plate, and microwave for another five minutes.

Carefully take the plate with the cooked potato out of the microwave. Using a fork, cut the potato down the middle, (if you can’t cut through it easily, place the potato back in the microwave for another 2 minutes).

After cutting in half, add desired amount of butter until it is melted on the potato. Lastly, add any desired toppings, such as sour cream, cheese, and bacon!
